steamed cabbage wedges are my favouritemost thing to serve with corned beef (alongside potatoes and of course the muschy pot onions). With a lightly horseradished butter-cream sauce is the best. Sauteed is probably the best tasting way to cabbage though.

I like to simmer/steam it until it's mostly soft then bake or saute it until most of the water is gone. It gets a bit sweet and tastes really good. The main thing is cooking off a lot of the water it releases.

This. Taste is a matter of opinion, but the green cabbage is objectively a lot cheaper, and nutrient wise its probably about the same as the red, but some people do prefer the red. Anyway, the thing about the "green" cabbage is its really only so much green with the outer leaves. Once you get past that it gets really white and bland. Calling it "white cabbage" would probably be more accurate. I really do love those dark green outer leaves though. They pack the best flavor and are probably the best with nutrients also. But sadly that's just a minority of the head and then you have a mostly bland white interior.

Maybe something that could work with that white interior is boil it and then mash it like potatoes? Or cut it really fine and treat it like rice? A lot of people do that with Cauliflower as a low-carb alternative. I don't see why cabbage couldn't work great in that way too. It is a member of the same Brassica family after all, so why not? So instead of Cauliflower rice or Cauliflower mashed potatoes, how about Cabbage Rice or mashed Cabbage?

But I would definitely not do that with those green outer leaves. Those are great.

I think the origin of this myth is that Sauerkraut was used in olden times to prevent scurvy among sailors before people figured out that limejuice is better for this. But yes, cabbage doesn't have a ton of vitamin c, but it does have some. It might be enough to prevent you from getting scurvy, but its far from an optimal amount so I wouldn't count on just this for your Vitamin C intake.

Although, depending on how you eat it, maybe just put some lemon juice on it and that would make it good? Might even be tasty.
