Seems like most people like em or hate em. Me personally, I like them, they compliment a good steak. What do you like to do with them?

Mushroom Burgundy

I'd be willing to become semi-vegitarian if I could have king oyster 3 or 4 times a week.

You eat white truffles, porcini and amanita caesaria raw.
Black truffels are used in sauce poivrade, boeuf en croute and to stuff chicken and guinea fowl.
Champignons de Paris go in croquettes, bouchée à la reine, cream sauce with steak and finely diced on toast (look for "duxelle" recipes).
Shiitake are great with steak.
Chanterelles are probably the most versatile of the bunch. They're fantastic in risotto, with fowl, in soup, potato gratin, with seafood, when paired with most winter vegetables, in pasta.
Morilles with Spring meat and vegetables (but no lamb). You usually pair them with asparagus and veal. Try them in potato beignets or pomme duchesse.
