Work depends on the boss. You get a good boss, work's not so bad. You get a shit boss, it's a hellhole and Satan runs the place. So luck is a major factor for all jobs.

I'm glad you found your calling, anon. I had a laboratory job where I physically moved little pressure filled furnaces up and onto my cooking chemistry lines, and watched multiple gauges andI had to lift weights on the weekend to be able to keep up with the physical nature of it. Eventually, I could have worked 24/7 and still not be tired.

I think the real criticisms about kitchen work is working when other people are off, like it's hard to be compatible with children and their school schedules and holiday times with family, especially if one has to travel. The times you are busiest is when your family tugs at your time.

This is pretty much what happened to me, happens to most losers. Eleven years ago, I was a college dropout, drug addict, failed at every other job I tried. Got a job washing dishes, and I just fell in love with everything about restaurant work, started doing prep, started working on the line, started working at different places, learning different things, building my resume. Today I make 90k as executive chef at a country club. Whenever I say that here, I'm told that I'm basically in poverty, but I have a house, nice truck, live very comfortably, all on a high school diploma alone, never even went to culinary school

Practice when you're home, cook for yourself as much as possible, learn your different cuts: julienne, batonet, dice, chiffonade, etc. Buy whole chickens and practice carving them, even if you'll never do it at your current job. Don't be afraid to branch out after some time. When you've been there for a full year, keep your eyes peeled for job openings at places near you that interest you, that may be a level above where you currently work. Don't fall into the usual traps of alcoholism and drug addiction, don't fuck the waitresses no matter how drunk and fucked up and horny they get, do buy some expensive ass orthotic slip resistant shoes the minute you have some money saved up, they are an investment into the future of your health because this is a very physically demanding job, more than most people realize. I worked landscaping and road construction a few times in my life when I wanted to do something besides cook, and honestly those gigs weren't as hard on me, I got regular breaks, real thirty minute breaks, not five minutes to sit on a milk crate. Get into the habit of stretching, for the love of God don't pick up smoking.

depends on your age and ambitions. i got lucky too landing a job in fine dining when i was 18. money was good enough and the work was engaging enough i didnt realize i was working a dead end job until i was like 27. i have zero passion for food, i just enjoy learning proceedures and moving fast. i said i'd never go back but i've worked as an EMT, a deckhand and a tree trimmer since and i realize i would have fonder memories of cooking if i hadnt been so directionless, exploited and also bonked out of my mind on stimulants and alcohol. i wasnt a whiteboy bourdainfag rockstar cook either, i just really really didn't want to face what was waiting for me at home so i worked and insane amount of hours and the management happily supplied me with speed to get me through. they even let me sleep in the office sometimes. might be fun to go back to for a year or two now that life is fucking normal, just chill on garm and listen to young guys talk about their actively imploding lives
