I used to make some orange muffins that were 100% whole wheat and had brown sugar on them and they were so good that you didn't even taste that they were whole wheat, but now I don't know how to make it again because I don't keep recipes because I always make things by eye.

The only way I've gotten 100% whole wheat bread to work is by adding 100g of cooked potato (regular or sweet) and an egg to 400g - 450g of flour at various hydrations. Some people won't consider potato bread to be 100% whole wheat.
You could also try fortifying with wheat gluten, around 3% - 5%,

My mom got rheumatoid arthritis and had to stop eating wheat to avoid flare-ups, but she ended up making an amazing gluten free cake recipe that I honestly prefer over any white flour cake. It stays moist longer too.
