I used to make some orange muffins that were 100% whole wheat and had brown sugar on them and they were so good that you didn't even taste that they were whole wheat, but now I don't know how to make it again because I don't keep recipes because I always make things by eye.

>>21655235The only way I've gotten 100% whole wheat bread to work is by adding 100g of cooked potato (regular or sweet) and an egg to 400g - 450g of flour at various hydrations. Some people won't consider potato bread to be 100% whole wheat. You could also try fortifying with wheat gluten, around 3% - 5%,
