If you have the gene, a leaf of cilantro blended into a jar of salsa will make it inedible. I ferment milk all the time and drink it regularly. I eat occasionally eat rotten meat and moldy bread. These aren't even in the same ballpark as the taste of cilantro if you have the gene. It's no longer a food taste, it's the taste of poison. It's literally tastes like hand soap.

"The gene" is actually several genes which contribute to the soap taste and are highly correlated but not guaranteed to all be expressed together. People can definitely have only some of the genes and get a much more mild soap taste than people who have all of them.
