How do I into leek? I've never cooked with them in my entire life but they look really tasty
>>
>>21659109
Spend a lot of time washing them. They're full of sand.
>>
>>21659109
Cut off the root
Make a slit about an inch long in the root end all the way through
Pull it apart in half
Wash it
Wash it again
Wash it some more
Cut up the white part and yellow part
Put them in a bowl and wash them one more time
Put the green parts back in the bag and freeze them, they're only good for making stock
Use them along with, or in place of, onions, they're not typically eaten raw
>>
>>21659109
Slit lengthways, wash thoroughly. Thinly slice. Put in a pan with butter and thyme, season. Stir for a couple of minutes, then cover. Cook for about 15 minutes, stirring once midway. Done.
>>
>>21659109
Treat them like onions or green onions
>>
>>21659109
If you want it as part of an overall dish, look into chicken, bacon and leek. They go great together, especially in a white sauce with cheese.
>>
>>21659109
You need to spin them to bring out the taste
>>
>>21659109
Just use it for fonds or broths instead of onions.
>>

>Use them along with, or in place of, onions, they're not typically eaten raw
In some countries they are hilled (repeatedly covered with a mound of earth as they grow), producing long, thin pale stalks which are softer, and can be eaten raw.

I love leeks. Leeks and potato soup is a fucking classic, its also delicious poached in white wine or just sautéed with butter. Serve with white sauce or cheese sauce mmmmm.
>>
in quiche, in soup, or my favourite: in fondue with eggs.
>>
Great for soups or stews. I put em in when I make stir fries.
>>
>>21659316
I like to take leek halves or quarters and wrap them in ham or prociuto, and bake them with a little cream and cheese over the top
>>
>>21659109
>I've never cooked with them in my entire life
Neither have most Americans, they just look up wikipedia and imagine what they taste like.
>>
>>21659348
Then why does every single grocery store stock them?
>>
>>21659109
mmmmmm giant green onions lads
>>

>Then why does every single grocery store stock them?
Scallions aren't leeks.
You don't chop up leeks to sprinkle over your raman noodles.
>>
>>21659362
Anon, you can't use scallions to make potato leek soup
>>
>>21659362
WOOSH . . .over your head.

We have leeks in the US. Look the same as the ones I saw in the UK. I made potato leek soup with them. So good.
>>
>>21659109
the french use them a lot. they're commonly used in cream sauces, as in vol-au-vents with chicken or ham for example.
>>
Slice the bottom roots and greens off. Cut down the middle but not all the way through, pull open and wash. After washing finish cutting them in half, then make half inch lateral cuts. Boil for 15 minutes.
>>
>>21659109
cut off the white half. Clean both halves.
You can boil the lower half it in buttery water or slice it and use it similar to onions (but they are more mellow/delicate in taste).
Top half boil it in a soup or stew. It goes fantastic in your bouquet garni.

There's no true substitute for leek flavour. Find a leek and potato soup recipe and see for yourself. Onion and potato soup just can't deliver the same thing

Not op but I've never washed between the leek layers my whole life, I just rinse the outside. But still I use only the white and light green parts which are stuck together, the actual leaves are usually damaged and messed up, or already cut off when I buy them
>>
mix with ground beef and cheese spread for a nice soup
>>
>>21659109
They make a really excellent side dish just braised in some stock alongside a roast, finished with a dash of cream.
Also you can hide one in someone's kitchen cupboard and tell them there's a huge leek under the sink.

step 1
get better leeks than in OP's pic
the more white part the better
green is tough and inedible

peel off the outer layer and trim the darker green bits
cleaning is a must

the anons who praise leek and potato soup have eaten well
Vichyssoise

also sliced and a light, buttery saute is good
"the poor man's asparagus"
>>
Char them and toss them in lemon, chili flakes and sauteed garlic
P versatile veg you can do lots with em
>>
>>21659109
They’re basically the same thing as green onions, but because of their larger size they’re a lot more mild.

They're great grilled/sautéed, but my favorite way to eat them is in soup. Leek and potato soup with a little smoked paprika is incredibly simple and delicious.
>>
>>21660978
>same thing as green onions
Disregard this prick
>>
sorry I meant greek onions
>>
Leeks sauteeing in butter is probably the best smell on earth.
>>
split down the middle and cooked for just a few minutes under the broiler. then dress the center with diced jamon serrano (I suppose you could substitute crispy lardons), chopped walnut and drizzled honey and gently slice it into bite sized pieces
>>
>>21660411
They're sandy as beached balls here. I wind up cutting them down into 8ths or whatever, rinsing them in a colander, then putting the whole thing in a (larger) bowl of cold water while I prep everything else.

They're like if onion or scallion decided it was a grass; the green on them is very green tasting. They're great with poultry. They're great in cream soups with a little sautee or char on them. They're great pickled with those little green thai peppers.
>>
vichyssoise or its even simpler cousin leek and potato soup are both braindead easy yet delicious
>>
leeky.
>>
reminder the all thing can be eat. don't waste
>>
Potato and leek soup is lovely.
>>
>>21659109
cut up in half circles
sprinkle generously over meat sauce or bread
add cheese on top
toast until cheese is lightly browned
>>
>>21661203
>walnut and drizzled honey
This!
I find eating raw leek with coffe really bringing out the coffee aroma.
Also the best with shrimps in a soup.
>>
>>21662591
Its the best.
