>>21663706Historically, mole would've been eaten with turkey. Stew like if you wish. If you treat it like chicken, then yeah mushroom stew is always good umami. Jap curries are good with chicken -> turkey too, and super easy to make if you buy S&B powder or any of those rectangles they sell. Making the powder yourself can be either really easy or more effort than you'd want cause the S&B tin has like 20 ingredients.I'd imagine a bell pepper stew with turkey would be good too, just winging it.
