Boil 5 minutes first. Sodium Nitrate's nasty. Alternatively, shave off a sacrificial bit of the meat cube. Vinegar/sweet sauce to temper the pig essence further as required.

This nitrate fear again? I thought we cleared that up a longtime ago... Nitrosamine are carcinogenic but Nitrates aren't. Nitrosamines are compounds made by combining amino acids and nitrates under very high heat, much higher temps than your typical frying pan temperatures. You need to quite literally char the meat for it to build up in quantities high enough to be slightly concerning long term if you eat that stuff often.

Maybe you could try cutting the spam thin, searing the meat itself (akin to a fried bologna), and then putting the seared meat onto the grilled cheese along with the cheese. Put the cheese on both sides of the spam meat so there are less uncooked patches of cheese.

My local Aldi has their canned pork cubes for like $1.75, there's no reason to be buying for anything more than $2 unless you NEED the flavored variants I.E you're preparing for total financial collapse or going camping. And Walmart has the bacon and lite flavored versions as well if you want variants on a budget.
