Turkey FlorentinePrep Time: 20 minutesCook Time: 20-30 MinutesServes: 4 to 6Ingredients:8 ounces (1 cup) egg noodles1 package frozen, chopped spinach, thawed1 1/4 cups milk1 envelope chicken gravy mix1 cup diced cooked turkey1/4 cup mayonnaise1/4 teaspoon nutmeg, if desired1 cup shredded Cheddar or American cheeseDirections:Step 1-Cook noodles in salted water until tender, about 9-11 minutes; drain and spoon into a buttered 1/2 or 2-quart casserole. Cook the spinach in the microwave, drain and arrange spinach on top of the noodles. Step 2-Combine contents of gravy mix envelope and milk in small saucepan. Heat just to boiling, stirring constantly, until gravy is smooth and thickened. Stir in turkey, mayonnaise, and nutmeg.Step 3-Spoon over spinach and sprinkle with cheese. Bake at 400 degrees for 20 to 30 minutes, until bubbling hot. 4 to 6 servingsThis is what my mom always made the day after Thanksgiving with turkey leftovers. I eat it year round personally with those shredded rotisserie chickens from the store.

From a friend’s family but apparently this is a recipe they’ve handed down for over 100 years for berry and custard pie:Fill unbaked pie shell with washed and drained fruit. Fruit can be blackberries, raspberries, strawberries, blueberries, etc. Custard1 cup sugar1/3 cup flour1-2 eggs1 cup milk (scant)Pour over fruit. If using raspberries, be sure berries are not floating on top.Bake at 375F 30 to 45 minutes (until custard is set) No Roll Pie Crust1 ½ cup flour1 ½ tsp sugar½ cup cooking oil3 tbsp milk Put these 4 ingredients into a 9” pie pan and mix there.Pour liquid over the flour mixture and mix until the flour is moist. Then pat evenly around sides and bottom fluting edge.Place fruit on crust, pour custard over fruit and bake.
