Funny. I bought cheesesteak flavoured Pringles (and a bunch of other absolute junk foods, two 12.4oz boxes of mixed-flavour Cheez-Its, a 13.7 box of Club crackers and a 13.8 oz box of Townhouse crackers, all, including the Pringles, totalling just $7 exactly) the other day for cheap. They taste more like sausage and peppers than cheesesteak, likely because everyone outside of the Philly area seems to think peppers are standard. They're not.
That said, as a semi-native of Filthadelphia, I would eat your cheesesteak. : )

Philly burgers, a dying breed of sandwich, are served on kaiser rolls and it's vastly superior to any burger bun.
Philadelphia doesn't do much well, but bread for slop sandwiches is one thing it does.

Next time use a Ribeye; the extra fat content really ties the sandwich together
Eye of round is better for the roast beef in the French Dip
Also, mix the cheese into the steak while it's cooking. And kind have shred the slices down into li'l bits while doing so and mix the onions mushrooms and peppers into that. Then put the bread on top of that mound and scoop it up whilw squeezing it into the sandwich

Yeah. Which is chewy, not soft. But you're right: it's not crusty, either. At least not at most places. There were a few joints around South Philadelphia that did actually make hoagies on crusty, demi-baguette type rolls but I haven't seen that in ages.

That's the standard. Any modifications beyond that usually get their own name like how adding cheese to a hamburger makes it a cheeseburger. Pizzasteak, for example, adds mozzarella and tomato sauce and a cheesesteak-hoagie gets raw hoagie veg on it (LTO). Crabsteak gets fucking Old Bay on it. Horrible, but some folks fucks with it. I've got one friend who likes crab chicken cheesesteak/chicken crabsteak.
I created a chili cheesesteak (hot dog chili and shredded cheddar) at a place on South Street once. Didn't catch on. I suck.

Whiz was always for tourists. The OG, yes, is provolone, but surprisingly, the most popular cheese is American.
Not at the well-known cheesesteak spots, sure, but you go to any cheesesteak place in the hood and every Lamontay and Shaqueefa will order their shit with American.
I used to live at 18th and Tioga before it got ever so slightly better. It's still a miserable shithole but seeing wypipo there isn't impossible now. When I lived there, I was paying $200/month for 3 bedrooms and I was the only white guy for about a mile radius from my apartment. I was about 2 miles north of Temple in blackest Africa
Anyway, every place around me that had cheesesteaks used American by default and whiz by request. Even that place in Kensington with the 1lb of meat cheesesteaks that I think is gone now (K and Lehigh, thereabouts? I forget but I recall it being near a Save A Lot and the only one I know in that area is on Lehigh somewhere between K and Aramingo) used to only offer American and whiz but when outta-towners began moving to that area, I think they added provolone due to demand

No. Shredded/chopped? Kinda. Most spots in Philadelphia use sliced steak, fry it, then use two offset spatulas to chop it up on the cooktop. Buy some hotpot beef. It's often thin enough to use for cheesesteak, available nationwide at every Asian supermarket and often just fatty enough to work well for cheesesteaks.
