My beef shank stew had an irritating metallic taste when I made it. I mostly followed this recipe https://www.youtube.com/watch?v=t_dSx2rJBnEbut I was only able to soak 1kg of beef shank in water for around 1.5 hours and I used a stainless steel pot.What did I do wrong? What's the cause of the irritating metallic taste?

If you forgot to drain the beef like in the video, the iron content of myoglobin in beef can also make it taste more metallic, but I have never experienced it myself. It could just be some people are more sensitive to the taste.
One of the early signs of catching a cold is a numbness or sensitivity to taste.Also, freezing and thawing meat destroys the tissue, which inevitably causes myoglobin to leak out, making the iron taste more noticeable.

most likely the meat had a lot of blood still in it, you're tasting the iron in the blood
