My beef shank stew had an irritating metallic taste when I made it. I mostly followed this recipe

but I was only able to soak 1kg of beef shank in water for around 1.5 hours and I used a stainless steel pot.
What did I do wrong? What's the cause of the irritating metallic taste?

Was the shank from a butcher? Might be blood causing that taste. I think some garlic can taste metallic too.

It was one of those prepackaged vacuum sealed frozen beef shanks from the store. Should I let it soak longer or maybe blanch it beforehand?

Anyway, if you used any canned ingredient, that can make the dish taste like aluminum. If you forgot to drain the beef like in the video, the iron content of myoglobin in beef can also make it taste more metallic, but I have never experienced it myself. It could just be some people are more sensitive to the taste.

City water? Tainted soy sauces?

This taste only happened to me once, when I used some Guinness to make a irish soup. I blamed the beer's iron content.

Yes, my pot literally says stainless steel on it. I did use steel wool to clean it like a retard. Maybe that made metals seep into the soup?

If the water is the problem it'd taste funky even before cooking. I drink it and it's fine.

I’ve noticed a metal/steel taste after using a washed stainless steel vessel that I scoured, so it may well have been that.
