I was eating this awesome picanha steak, it was juicy and everything despite messing up the fibre slicing thing, however there was something that disturbed me and it was that non chewable thin membrane between the fat cap and the actual meat, which I had to spit after each bite and give to my dog. Gross.

How on earth am I supposed to remove that shit before choking and fucking dying?

If it's actually between them all the way through then you can't. Silverskin isn't usually between the meat and a fat cap though, or if it is it usually only extends a small amount under the fat. Did it actually make a complete layer between the meat and fat for you?

Are you eating at Brazilian steakhouses? If not, then you weren't eating picanha, which almost always has that kind of silverskin to varying degrees. Do you think all cuts of meat are the same or what? NY strip is notorious for its little bit of cartilage/silverskin between the fat cap and eye, but there aren't many other popular cuts that have that sort of thing, or at least not as obtrusively so.

Not in the pan, I was thinking before serving the cooked meat to my guests.
Maybe it's possible to trim the fat cap from the entire piece, remove the skin, gluing back the fat cap with a bif of honey and roast the meat in the oven. The honey would be protected by the fat cap.

It's a pretty tough cut, anon. It's the lesser expensive Brazilian cut, which requires some chewing since it should be part of a rump roast, and yes, sliced against the grain when serving. (imho, it doesn't belong in a steak cut). On an outdoor grill, the picanha is folded to use that intact fat cap as protection over hot coals. So not only did you cook it wrong, but a picanha should be sliced with a very sharp knife and COVERED in oily chimmichurri to tenderize each bite.

There's another cut, with that gristle piece right down the center of each steak, center gristle is the name of it, but a "blade steak" is delicious muscle on either side. You can't trim it away, because it destroys the integrity of the steak.
