Similar to standard hot and sour soup but it uses beef broth or stock as the base instead of chicken.

You take these:
3 dried shiitake mushrooms , soaked in hot water and thinly sliced
1/4 cup onions, sliced
500g stew beef
5 cups beef stock
4 bamboo shoots, finely shredded
1/3 carrot, shredded
1 thumb ginger, shredded
2 tsp. white pepper (black pepper is fine if you don't have it)
3 tbsp. soy sauce
1 tsp. salt or to taste
1 tbsp. honey or maple syrup
1 large egg , whisked
3 tbsp. worchestershire sauce
1 tbsp. red wine vinegar
Water as needed to keep the soup from being too thick
(optional: sesame oil for drizzling, chopped green onion, chopped coriander)

Brown the outside of the beef with a little oil or butter. Add the onions, when they start being a little translucent, add stock to the pot to deglaze. Bring the stock to a boil, then reduce the heat down to low after. Then add all of the rest in. Wait about an hour and cook it on low heat.
