Made a short rib fettuccine. Great fall dish.

Marinate short ribs in wine, bay leaf and fresh thyme for at least 24 hours

Take out ribs but retain marinade.

Dutch oven, brown meat

Dice up two large carrots, one sweet onion, one fennel and brown those in the dutchey

While thats sweating. Grind up about 10 grams of dried porcini or shitake mushrooms into a fine powder

To veggies add powder, 1.5 tbsp tomato paste, can of whole tomatoes (crushed right before), two bayleaf, sprigs thyme, 1 cup of reserved red wine marinade, 2 cups beef stock, parmesan rinds. Bring to simmer, add ribs. Oven at 320 for at least 4 hours.

After 4 or so hours, remove ribs and take out the bones and after cooled a bit shredded up the meat.

With the sauce you are going to want to strain it and then carefully remove the rinds, Bayless, thyme. Then take the liquid and the strained veggies and blend. Pour this blend mix back into the Dutch oven and add half cup cream and then the meat. Back into the oven for another half hour or so. And thats the sauce.

4lbs of ribs with the above measured fluids will get you enough to make with 2 pounds of pasta.

When I combine the sauce with the pasta I usually add some of the seasoned pasta water to it about half a cup for one pound of pasta.

Then plate and add cheese like pic rel

Looks nice. This is the time of year that I start making chili. I'll be making an effort to improve my recipe this year, I got some dried chilis and I'm going to make Alton Brown's chili powder and use it in my basic chili recipe to see how much it changes and I'll get fancier from there.

Occasionally I also feed on the void I feel inside, only slightly balanced by that weight you feel in the middle of the chest when you're staring into the abyss and you're trying to fall asleep but the monsters of emptiness are shrieking inside of you and it echoes in a muffled screaming sound. That's always a nice dish.
