Popular Chinese noodle dishes *look* a lot more flavorful than pho or ramen do, so if you taste them and they end up being super bland, it's extremely disappointing. Beef noodle soup tends to be guilty of this. There's a lot of varieties and they're hard to keep track of, and even within those varieties, there's a lot of regional and non-regional variations that change the dish pretty significantly. People like to know what they're ordering, and that's a lot harder to do with authentic Chinese food than with Japanese or Vietnamese food. All pho is the pretty much the same, and there's only a few main types of ramen, and they're all much more similar to each other than they are different.

There just isn't one "main" dish to represent the Chinese however, unlike how Japan has Ramen or Vietnam with Pho.
