If u wanna go all out with your chop. 3/4 cup apple juice, two cut up apples in chunks, small amount brown sugar, apple cider vinegar, reduce in sauce pan for about 30-45 minutes on simmer around 25 min add salt, stone ground mustard and or mustard powder, small amount chipotle seasoning, small amount smoked paprika, reduce until final time . You can also let your pork Warm up before cooking, like steak. Personally I dont use weights. Pork chops over a half inch I cook like a steak of similar size. As in, letting it warm up and taking time to cook it on a pan and/or transferring it into an oven. Though I primarily cook chops like that on my grill, and if not I cook them in a dish in the oven with stock/cream/ etc. but what you made looks good and I'd eat it, hopefully no rust though lol

I did have them out awhile to warm up a little, maybe not room temp though. I glazed one with mint jelly and it was very nice.

Pork chops and pork itself are traditions here in Iowa. There's even a particular thick chop called an "Iowa Chop".

There's a local chain of restaurants here called The Machine Shed (used to be called the Iowa Machine Shed) that's always done a great pork chop.
