About 20 years ago, I saw the greek equivalent of a "nonna" a "yiayia" giving a small cooking class at the Greek Festival in Miami (St. Sophias). She was discussing her recipe and method for making the spanokopita. She was utterly cute, and a younger person narrated her advice as she made a pan of it to demonstrate, and what blew my mind was that she had about 12 herbs in there. And she didn't know what they were called, she had them in pots since the old country when she emigrated. When I tried a piece, zomg, you need to seek out marjoram, chervil, and lemon balm or whatever else she is tucking in there. It was amazing!

I literally walked across the street with a photographer from my tour just to avoid yet another gift shop stop with the group, lol, and their version of Galactoboureka had just come out of the oven. Just live in a pork country. Here in Germany i've never seen gyros being anything else than pork. If you don't eat pork you have to get a döner where you can usually chose between veal or chicken. Rarely lamb.

This. You'd be surprised how many "Greeks" in the so-called diaspora are really turks. Their counter argument is usually that Americans consider beef or "lamb" a superior meat, but there would be nothing stopping them from offering an alternative "beef gyros", just like how some sandwich shops offer a "chicken cheesesteak". ("Lamb" in quotes because you get a beef-lamb blend at best.) These families have literally pledged allegiance to Istanbul instead of Athens.

Greeks don't eat souvlakis every day. They eat spagetti with mince as a staple. I've also seen them eat small squids with onions which is ok, but not quintessentially greek.
I'm half greek and I think greek food is a little weak apart from souvlaki which is the pinnacle of global cuisine.

There's this small restaurant I go to when I'm in Thessaloniki that does spachcocked grilled chicken on the coals and they make this insanely good sauce which they smother the chicken while it's spit roasted and then they put some sauce in the plate when served.

It's a combination of olive oil, kefalotiri (it's a hard sheep cheese like parmeggiano), mustard and herbs. It's probably the tastiest chicken I've ever eaten. I haven't been to that place in 2-3 years. Last time I went it wasn't very busy, hope they didn't close.

I think I found it, it's called The Famous Rooster, it's in Evosmos Thessaloniki. If anyone goes there check that place out you wont be disappointed.

Nah I'm in Bulgaria, I buy the local brands. Most common brand is picrel but they have others that are better. Sometimes I go to this butcher shop out of the city and the shop next door has homemade ones - those are the best. They put finely ground semolina between the sheets so they don't still but that also ads a nice texture to the final product. I think this>>21678319 was made with them.

Greeks are sort of like the japanese in that their diaspora often has better things to do these days than run restaurants. The difference is that the immigrants running japanese restaurants usually arent opposed to a key ingredient.

I've heard euros complain that it can be hard to find pizza places that use pork sausage because so many are run by Muslims.

lets dispell some myths
1) first and foremost greek new york, long island etc diaspora opened their businesses in jewish neighbourhoods which were practically mild ghettos, they had to adopt kosher dietary preferences otherwise they d run out of business hence why lamb became a thing
2)Gyros with chunks of meat wasn't a thing until juntas practices forced psistaries to switch to pork due to spoiled diseased argentinian beef contaminating the meat markets (hint trump millei is doing the same thing as we speak) , until then only what we call doner kebab was available i.e ground beef pork was only sold as skewered meat what we call souvlaki
