Annatto is a seed that's very red and it's used as a natural red food coloring in many foods.

You can take advantage of it by buying annatto seeds (in the latin food markets you find it as achiote) by gently heating them in any oil (not water).

You can prepare it in advance and just use it to make red foods redder.

It has a very mild floral flavor that most people wouldn't identify at all

I have a bottle of it. It really doesn't have much use outside of making stuff red. The seeds are incredibly tough and don't really impart any kind of significant flavor to what you're cooking.
