And just like a steak you want some marbling. Grill to medium at a tad lower and slower temp than you would grill a steak. Of if you have the means, hot smoke it. Since I live in pork country chops like this are available all the time for pennies on the beef dollar. But I know some places all you will find outside of a specialty shop might be those boring. When I make tednchile sauce, after bleeding and sifting the pod skins from the saucy part, I keep those ripped up pods to slater onto the chops, and fry the chops. I add salt, coarse grind pepper and garlic to the pods before slathering onto the chop.
