pork likes low and slow, so if you want tender and succulent, cut with your fork type of pork chops, buy them thicker and bone-in. If not cooking in the oven or the grill, but in a pan, brown on both sides, turn down the flame and put the lid on the pan.

Whatever braising liquid you wish before the lid goes on. I like coffee, whiskey, calvados, wine, vermouth, port or sherry. For even more tender, consider an acidic braise like squeezed sauerkraut, canned tomatoes, or sour cream. If you don't use a braise and wish to do a pan gravy, dredge those chops in seasoned flour before browning, and after taking the lid off, deglaze the pan with stock, cream or liquer of choice. Serve over crispy chops.

It may make a difference not to start with frozen chops. Freezing does affect them.

Grilled porkchops are underrated in my opinion. But good grilling chops are not always available in some areas. Center cut bone in loin, 2 inches thick. And just like a steak you want some marbling. Grill to medium at a tad lower and slower temp than you would grill a steak. Of if you have the means, hot smoke it.

Since I live in pork country chops like this are available all the time for pennies on the beef dollar. But I know some places all you will find outside of a specialty shop might be those boring. Thin, hyper lean cuts give pork a bad name.

Pork gets some hellacious freezer burn very easily, and changes its taste for the worse. You can entomb something like chicken breasts for years in a deep freeze (-20 ℃ or thereabouts) and they will still be moderately edible (in fairness, chicken breast is kinda shit even when fresh), but pork gets rather nasty.

They're never tender enough. But you can get then fairly close to tender by cooking them super slow. Wrap tightly, set your oven to the lowest temp possible, and have a good night's rest. In the morning, they might be halfway to the tenderness of better cuts.
