Matcha is among the worst ice cream flavors I've ever tried so I can't say I've had the urge to try more variations

Yes matcha is enjoyed by japanese. They have a weird ceremonial way to serve it. Most matcha is absolute garbage, but the good stuff is really quite nice if you like Japanese green tea. It's just a stronger version of that.
