I use very fatty beef so I do it medium probably, it always comes out good, it's always juicy.

It's just a basic technique of grilling thin patties topped with thinly sliced onions, meaning only one side of the patty gets caramelized while the onion side gets some charring after flipping it.
I'm not American, I have no personal pride in that style of burger, I just think it's good.

I do hot-smoked burgers, so they're always well done. Did some for lunch, smoked with cherrywood and applewood chips on lump coal. Also grilled the bacon.
