I had a pound of fresh mozz that I needed to use. What I've done so far is, pull out the slices, pat them dry, dip them in flour mixed with a touch of cornmeal, dredge them in eggs with some half and half, then into the panko/breadcrumb mixture with italian seasoning. I repeated the egg and breadcrumbs after that. Now they are sitting in the freezer till dinner.I'm nervous about frying them in oil because I don't want to lose the cheese but I didn't see any recipes were people really baked these.I'm not sure what time/temp if I tried to do it. 400 for 20 minutes? What would yall do with these?(pardon the mess)

I would just fry them. If you have a thermometer it's easy, just let the oil go to 365 degrees and then drop in.If you don't have a thermometer, just wait about 5-10 minutes on medium flame, drop in a single drop of water. If it's hot enough the water will fry instantly. Then each mozzarella patty you probably only need to do for about 30s apiece. Tongs or a slotted spoon to extract.Not that hard.

A lot of recipes I saw suggested a lower than average temp for the oil and like 1 to 2 minutes before flipping them. I'm serving them with spaghetti and meatballs and I just don't want to mess up dinner.

I worked at Sonic for forever. Mozzas were cooked at 350° for 2:15.I've made some, and also fried store bought, despite not having an oil thermometer, not hard at all. You just have to hang right there as they fry and wither listen out for a different fry sound (thr cheese starts coming out) and can pull them when you hear the change in frying sound, or pull them up and inspect them for 2 seconds every few seconds.
Cheese freezes fine. It may end up crumbly when thawed but for any melting purposes this doesn't matter.
In case anyone was wondering how they came out. I did end up frying them but honestly it was too high a temp and short a time I think
