I pour it into half full bottles of mustard to loosen them back up. But I'd rather use jalapeno brine.
You can whisk it with mayonnaise for a coleslaw dressing too. I usually take a sip and pour it down the sink. I eat a lot of pickled things and can't possibly utilize all of that brine.

Do what I do: look at 4-5 recipes, figure out commonalities, then use that to make it however you like.

I just mash up yolks with mayo, pickle juice, dill, ground mustard, and pepper.

My grandma would make picklesickles. She would take little Dixie cups (2oz) and fill them with pickle juice and drop a slice of pickle in, put a lid on them, and chuck them in the freezer. They came out as little picklepops, we loved them as kids.
