Only one that processes whole animals, so you can get stuff that none of the other butchers carry (like beef hearts, pig skin for cracklin, cuts of fat for sausages, pig heads stuff like that) and they have the best prices by far. When I was a kid I ordered well done TOO, because I hated it when they say "it's medium/medium rare" and they cook steaks even worse than my infantile self at that age, so if I see blatantly raw part I ask for it to be recooked so they hate me /spit in it/make me wait another 15min will I watch everyone else eat. Those were my reasons. Now I only order medium rare in a semi fancy place at least, where I KNOW they won't fuck it up. And honestly I prefer to cook my own.
