I like using the egg drop soup packet as a base but if I don't have it I just use a lot of the knorr chicken bouillon. I keep a tub of pic related around pretty much specifically for eggs. It could also be store brand or Challenge, whatever's on sale. Start with cracking your eggs and beating them into an easily cleanable container with a bit of salt. I add a liberal amount of butter to a large pan or pot then start my onions and a jalapeno or some chili tepins from my yard. One the onions have a bit of color I add a small (drained) can of diced fire roasted tomato and just let that heat up for a bit before adding the eggs and stirring until the eggs are just about where I want them, they'll continue to cook a bit once removed from the heat. That'll net you mad decent yet easy eggs that you can recreate consistently. If you want to add meat then just start with a small amount of oil and use something that'll add its own fat like SPAM or chorizo. If you want to start making tacos then chorizo & egg is EZPZ.

I highly recommend fish sauce, just a couple of drops is enough, and go with a bit less salt than usual. Don't be fooled by the smell if you are not familiar with it, although good quality fish sauce does have good taste on its own.
