You're not supposed to eat them whole. You would add them to a sauce or garnishment to add saltiness, not disimilar to the usage of soy sauce.Chop up parsley, garlic and a few anchovy fillets. Mix in a bowl with some oil, and you've a sauce. Put on fish, chicken, etc.
