WHAT YOU NEED
> 12 oz (340g) cavatappi
> 4 cups small broccoli florets (~500g)
> 5 slices bacon
> 2¼ cups whole milk + ¾ cup cream
> 4 Tbsp butter + 4 Tbsp flour (roux)
> 6 oz sharp cheddar, 4 oz Gruyère (grated)
> 2 cloves garlic (grated)
> 1 tsp dry mustard
> 1–2 tsp Worcestershire
> ½ tsp black pepper + pinch cayenne + salt
> 1 cup panko + ¼ cup finely grated Parm + 3 Tbsp melted butter
> a little bacon fat for the skillet

DO THE THINGS
> oven 220°C/425°F
> bake bacon on rack 12–15 min -> chop -> save 1–2 tsp drippings
> toss broccoli w/ oil, salt, pepper -> roast 14–16 min -> dot 1 Tbsp butter -> 2 min more
> drop oven to 205°C/400°F
> boil pasta very al dente (2 min under) in salty water -> drain
> warm milk+cream w/ grated garlic (don’t boil)
> pot: melt 4 Tbsp butter -> whisk in 4 Tbsp flour 2 min -> whisk in 1 tsp mustard
> splash in warm dairy in 3 additions -> simmer 2–3 min till glossy
> add Worcestershire, pepper, pinch cayenne -> light salt (cheese/bacon are salty)
> kill heat -> whisk in cheddar+gruyère by small handfuls till smooth
> swipe 12" oven-safe skillet w/ bacon fat
> fold pasta + broccoli + half the bacon into sauce -> into skillet
> mix panko+Parm+3 Tbsp melted butter -> blanket the top -> scatter remaining bacon
> bake 18–20 min @ 205°C/400°F till top deep gold + edges bubbling
> rest 10 min
