For dinner tonight I bought $3.50 of chicken thighs (about 1.2 lbs), two bags of frozen PictSweet summer vegetables (20oz total), and about half a cup of wild rice. Cooked the chicken in a pan with lid, the. Vegetables in same pan. Com ined with rice once done. Total was about $10 but it should be about three meals and is easily two.

I don't like making complex things because I am a shit cook and an autist with motor issues, so I'm often lazy and just eat a lot of sandwiches/chips things like that and they're better for gayman anyway. I buy a lot of those premade sandwich filling containers from the supermarket and then buy things to add to it to make it better or just different, examples.

Shit's good yo, I put greens in there and eat chips and chopped fruit with it like an elementary kid, I could learn to cook more things but I like sameness and generally hate cooking because I have no fine control and tire easy. I make homemade pizza sometimes, that's my limit and it takes me all day to make it all from scratch so I have to have nothing going on.
Anyway OP learn to use herbs, spices, and what goes with things then you can eat the same food often and have it be different to break the monotony if you like easy things, which I'm guessing you do.

Having a propane grill helps a lot.
I'm trying to integrate more grilled chicken, asian marinades are really good but sometimes I'm too lazy to make them.
I also have frozen chicken for when I don't have something ready.

I'm lazy but plan ahead, buy a $20 pork loin, cut into 18 chops, freeze on a single layer.
I don't even need a side sometimes
or toss it in a rice a roni mix

also make queso dip (velveeta,salsa) which can then make a quesadilla or nachos, tacos, or just be a topper with your favortie frozen airfried protein, just add some southwest seasoning

I am being completely serious when I say this...
Use this "single lonely guy" time to actually learn to cook. I don't mean learn to cook a dish or two, I mean learn to cook. Learn fundamentals and techniques. Fuck up repeatedly and end up with barely edible shit that only you have to choke down. Do stupid shit like make sauces from scratch for your frozen tendies. Then once you can make sauces, then make your own tendies.
Before you know it, you'll be able to kick out an entire dinner with a handful of ingredients that you forgot you even had in the freezer or cupboard.
Here's the best part though... Other than a 7 figure salary, there is little else that is more of a panty peeler than cranking out a fresh dinner from scratch while she watches from the sideline. Especially once you get confident enough that you can bullshit with her as you're cooking with no recipe in sight because you just know what you're doing.

You can slice up the tenders, toss them with buffalo sauce, and then put it on some lettuce w/ ranch so you can pretend you're healthy and having a "salad".
You can also put some mozzarella on them, throw them under the broiler until it melts, and dip them in marinara for a lazy chicken parm finger food.
