As a Brit who has made Lamb Stew a number of times . .. I have a few observations.

I would normally stew the lamb in stock (including Rosemary) well before adding the veg (excluding garlic, it's not really a Brit thing) It's nice to see things done differently but I have a few questions:

Why is the pot smeared with Lard?
And what is that stuff you added to the Mortar during grinding?

The base looked a bit thin, not complaining, it just looks odd compared to a thicker base I am used to.

I'd say that it's a bad cast iron situation but you would also have rust on that sometimes.
He must be using fat instead of water to prevent it from rusting more and from absorbing any bad flavours.
But everything in the pot will be releasing water at the bottom too.
