Jiro Ono has turned 100.
>>
>In Japan, sushi legend Jiro Ono turned 100 on October 27, 2025, yet shows no signs of full retirement, declaring, "I plan to keep going for about five more years." The founder of Sukiyabashi Jiro—a 10-seat Ginza basement gem that held three Michelin stars from 2007 to 2019—earned Guinness recognition as the oldest three-star head chef at 93. Featured in the 2012 documentary *Jiro Dreams of Sushi*, he served dignitaries like Barack Obama, once shifting their 2014 reservation to prioritize regulars.

>Born in 1925 in Hamamatsu, Ono apprenticed at 7, moved to Tokyo at 25, and opened his restaurant in 1965, pursuing perfection: "I haven't reached the top yet." Now among Japan's 100,000 centenarians, he credits work as "the best medicine," visiting when possible despite hand issues, serving only special guests. His son Yoshikazu, head chef, notes Ono's humor and kindness—once worrying director David Gelb was bored filming octopus massage.

>Aiming for 114 after hearing of Japan's oldest man dying at 113, Ono walks, eats well (no alcohol), and favors maguro, kohada, and anago. Gelb calls his enduring tradition "an inspiration." Under autumn skies, Ono embodies lifelong dedication.

Trying to perfect sushi has to be the most asinine endeavor ever. Might as well dedicate your life to perfecting fairy bread.
>>
>puts candles on cake
>"that will be 500 dolla baka gaijin"

Is he related to Yoko Ono?
>>
>>21685327
He sure looks it, if I reach 100 I'm giving my family full permission to throw me off a cliffedge.
>>
It took him 20 years just to wash the rice right. He definitely isn't close to mastering sushi yet, not even close.
>>
>>21685327
how perfect can putting raw fish on rice really be
nigga should have become a tuna and rice farmer since that's what really matters
hell even making vinegar is more involved
>>
>>21685327
I was sure he died.
>>
>>21685412
Pretending his job isn't something you could figure out in less than a month is the only way to keep his inflated prices.

>I haven't reached perfection yet
That's because it isn't humanly possible

Keep dreaming, Jiro.

It's a shame that the sequel to this documentary wasn't as critically acclaimed as the first. I think that "Jiro Nightmares of Ass Rape" was much better.

That's the japanese way of doing things. You don't ask for anal directly, instead you bring gifts for the boss and share a drink with the procuress.
>>
>>21685740
koto drums start playing, soon accompanied by flute and bilwa
Onlookers quickly run from the restaurant

All sushi tastes like wasabi and soy sauce, regardless of what fish it is.
>>
>>21686222
You'd be fucking creaming yourself to anon flipping burgers for 50 years if he was japanese and starred in a shitty documentary about it. "You just have no idea how dedicated he is to flipping the patty, how he makes sure the beef is brown enough before it gets flipped, how the bun gets lightly toasted on the grill, and how the lettuce compliments it." Anon is a retard but you're a little bitch boy suckup to someone who will never know you and would probably think your blood makes you lower than a dog if he ever did see you in the world.
>>
>>21685740
The last thing you see is his hand rotate 8 degrees and you hear the sound of autumn leaves as your head sees your body slump to the ground

>>
>>21688359
It's conceited to think you know more about how people enjoy their sushi than they themselves do. The exact same trained-to-be-100%-repeatable piece of sushi is not going to be enjoyed equally by all people. The chef is in charge of making the food, but the customers themselves are in charge of eating it and they have eaten far more sushi than you have served to them specifically, even if you've made 100,000 rolls for the average person. It's one thing to expect people to not be loud or disturbing to other customers, or destructive to the property and dinnerware, but another thing entirely to extend demands of behavior to the point of demanding nitpicky shit.

People will bend over backwards for it though. If the chef demanded they not drink any water the entire meal, these cucks would gladly leave fucking parched to pay phony lip service, as is the japanese way.
>>
>>21685445
Japan's restaurant industry is pretty frigid in general to tourists because you constantly have groups that will reserve tables and times at high end locations, and then not show up.
>>
>>21688402
This is not true because the wait list on a high-end restaurant is months in advance and often requires just straight up luck to get. A tourist who is not committed to the occasion will be filtered out by this alone.
>>
>>21685327
Unless he has eaten every single piece of sushi he ever made, himself, how would he know one of them wasn't perfect.

>perfecting uncooked ingredients on balls of rice.
What exactly is perfection in this context? How of you even know when you’ve reached it? How many ways can you put fish on rice? Can a factory make “perfect sushi” with molds?

>rolls
Ask me how I know you're full of shit

Daily reminder asian culture of obsessing over small details is actually the correct way mastering things.
Westerners have just adopted a very shallow culture in the past few centuries where appearances and impressions matter more than actual mastery and attention to craft. Once the oldies die, you guys are in for a shock.
Best start learning crafts in your free time. You don't even need to be professionally qualified, just need to know how to do the job
