That escalated quickly. I don't like roasts at medium rare or lower, but there's not going to be much pink left. I knew the rest was done when the thickest part was rare, so I should not have given it any extra time.
The hole poked by the thermometer allows for faster cooking and loss of juices anyway. There's really no way to fuck this up though. It's a nice cut of meat with plenty of fat.
Even if it was well done it wouldn't be dried out unless you really forgot about it for a couple hours.

Delicious. Should get a few nice meals out of it. Next time I'll be more mindful of the butterfly. I misjudged the thickest area which was folded over itself. It's just a bit more done than I'd have hoped. But as I posted before, you really can't screw it up.
$10/lb was a good deal for this too. Almost all cuts of beef are more than that usually. I try to never pay more than $10/lb for anything but some seafoods and cheeses.

I know. That's usually about the cheapest beef prices I can get, and it's not that organic kind either. It seems like something that should be $15/lb or more just based on the "natural" labeling, which usually automatically makes meat 50% more expensive. Hell, I think the last time I looked at a rack of lamb at the store it was $19/lb, and that was a few years ago.
It's like they priced this lamb as if it were Ham'b.

Good cookalong
If you have never tried it i recommend you try slow roasted lamb. You just cook it at 325 until it hits about 185 then blast it under the broiler until it either gets brown or hits 200. Comes out wicked tender like a pot roast. I almost did a lambalong last week but didnt wanna deal with new captcha, i made pitas and tzatziki and it was good
