So mayonaise is specifically: egg, oil (any technically) and water as it's an emulsion. That is very flexible but it can never be vegan because of the egg, right?

Mayo is addictive for obvious reasons, and I can eat a whole rack of ribs slathered in barbecue sauce, which really is just ketchup with molasses, mustard and seasoning. HP/A1 I enjoy in large amounts with grilled meat, hot sauce I'll eat until I have a stomach ache.The first few fries I dip in ketchup are heaven on earth, then it loses all appeal to me. I can't be the only one who feels this way.
