I had some zuchinis, mushrooms and red peppers that have been sitting in the fridge crisper for a few days, long enough that if I didn't use 'em up soon I'd have to throw them out. So, I decided to cook them up and decide what to do with them later. I had originally planned on using them in a tomatoey spaghetti sauce but just went with beef for that.Anyway, so I fried / braised the vegies, and left them in the pan overnight. I need to do something with them today, and need suggestions stat.picrel is the actual pan and veg.
Saute some bacon or kielbasa with onions, add your vegetables, saute some more, add garlic and tomato paste or sauce. Now you can eat that with pasta, put it on pizza dough and cover with cheese or put it on potato pancakes.
salt and pepper to taste, then enjoy!

>>21686730Wouldn't have mattered anyways. I've left low-protein, salted food out overnight for up to 18 hours and it's been fine. I would only worry if it had dairy, seafood or was low acid/salt content.
