I can't for the life of me figure out how this is more advantageous for shelf-stable milk than cans of evaporated milk. It takes up more space, produces an inferior product and costs more.
Perhaps it's useful for some specific recipe like a dry milk coating or in a powder seasoning blend, I'm not sure.

I buy the fat free stuff for my tea and coffee and the occasional recipe that needs milk. $14 for 1.5 kilo. once re-hydrated gives about 15 liters. it's 50% cheaper than fresh milk so that's good enough for me.

I own heavy cream powder. I got it to make keto hot chocolate mix, but I never got around to it. Now I keep it with my attic setup for kitchen-free coffee. I've got the electric kettle for hot water, the instant decaf coffee, some stevia, and the cream powder. I can make a hot cup of nothing late at night without going to the kitchen floor and making a noisy mess.

Backpacker here. Powdered dairy usually won't go rancid and it weighs a lot less. I make my own vacuum packed meals with powdered creàm, milk and butter (powdered peanut butter, too). When you're tired, wet and hungry, it but hits the spot.

Another trick: add 1/4 capsule contents Vitamin C right after the salt has been added. You won't taste it but it will improve your rises. A baker taught me that, and it works.

I don't drink milk and so everytime I buy milk for a ressipy 80% of it goes to waste. So instead I Have a tuppaware container of milk powder and it's amazing. couple spoonfulls and you can make a nice gravy or cheesesauce or whatever. I'm sure it doesn't make the best drinkin' milk but it's perfect for cooking, and lasts yonks on the shelf.
