that looks nice. walmart does sell unfiltered olive oil. they have olive oil from spain, greek, italy, tunisia, usa. obviously it's not going to be the best olive oil in the world but there's a small chance op has no access to at least a palatable olive oil.

op isn't even saying oil is always bad. op says there are times where oil does make things better. but sometimes basic steamed vegetables will taste better than ones with oil and roasted or sauteed. of course there are times where i do want things with a lot of good quality olive oil but not always. people thinking "fat is flavor" and that you always need to add tons of fat does happen and just gets old.

one italian olive oil says coratina, another says castelvetrano. a greek one says koroneiki. most of them are just various blends.

Thanks for your answer. Coratina is a type of olive if I recall correctly from Puglia, not a big fan of their local product. Castelvetrano is a town in Sicily, good area generally for olive oil. No idea about the Castrol oil they produce in Greece. I am genuinely interested in Italian olive oil abroad since I worked for eight years in a farm that used to produce it in Tuscany.

never tried coratina before but i've been seeing a lot of castelvetrano products lately. the jarred olives aren't bad. i don't think i've ever specifically had greek olive oil but kalamata olives are delicious.

those are the brands of 100% italian/sicilian olive oil in a nearby walmart. there are some other italian brands but they're mostly blended with oil from other countries.

They are mostly commercial brands, quite similar to the basic ones you could find in a supermarket in Italy. Nothing very interesting about the farm, just a standard one. The shifts in the olive press were a blast though, very erratic atmosphere and overall great people. The 70/80 year old farmers taught me a lot and were pretty fun to have around.

From my experience, neutral oil that tastes bad is from oxidation. Older olive oil or caizyou have strong flavors that won’t be overpowered by the off taste from old age. I can’t say that tasting fresh neutral oil directly has zero unpleasant flavor, but I don’t find it to be anywhere near enough to diminish a final dish.
