america's test kitchen's show has been pretty trash since chris left, but their recipes are still solid and their equipment and taste tests are second to none
milk street's show was much better for a while, but then chris had a latelife crisis and wanted to make sure people knew he was actually capable of cooking, and the show has been worse for it ever since. I die inside every time that dogshit twee music plays. their recipes are also solid though
america's test kitchen is better for getting an extremely solid version of your standard recipes, while milk street is more for exposing you to less popular dishes or using specialized ingredients in interesting ways
you go to america's test kitchen for homemade tater tot hotdish, you go to milk street for them telling you to add some miso to your caramel

well america's test kitchen and cook's country both got significantly worse after he left. every interaction feels incredibly fake and forced, compared to the mostly organic chemistry they had with chris, even if at times it felt like their banter was backed by some genuine anger towards him. bridget and julia feel so off now, like they're reading from a script
it's like they're trying to be sandra lee or ree drummond, when that's just not how they are, and it fucking sucks. and god, the black lady they got to do the history parts of cook's country is the fucking worst. what a fucking snoozefest

ATK would be a worse show if Chris hadn't gotten fired for cheating on his wife with the camera woman.

Its also good that it seems like its part of Chris's new contract that he can't be a massive pussy regarding spice, that he isn't allowed to talk about his time in France and has to stop trying to compare his couple years there to every food in the world.

Milk Street as a concept compliments the other two shows since ATK focuses on rigorous testing, CC focuses on American food, and MS focuses on foods from other countries.
