It's time to admit that these are the laziest and least satisfying way to prepare potatoes. Hash browns are the best for breakfast.

Also why are they called "home fries"? Like you can't make proper french fries at home?

Home fries can be hard to get right. Best I ever had were from a place called Fork & Fire in Farmington, CT. Perfectly seasoned wedges, not mushy, great for dipping.

you gotta soak em, shallow frying works, take out a batch and let it dry then either air fry it after or refry it for crispy goodness

I started microwaving mine. Whenever I tried home fries it would take forever for a mediocre result. Now I chop and microwave the potatoes then start the onions and peppers at medium heat. Once the potatoes are done I turn up the heat and add them to the pan for a final crisp.

It might not be the most seekay method but I finally get a consistently good result

Soaking is key. Do this. My old place used to boil them first.

They do. And it can sit out all day. Microwave trick probably works well.
