No, that's only half of it. The other half is charging outrageous prices for what's basically a food sample - something you should be given for free, so you can decide which dish to order.
>>21690595No it's more about novel flavor pairings where it sounds weird but they've found the ratios to make it taste good. Worth doing a course at least once to make your own informed opinion. Mine is "cool/interesting but never on my own dime".
