If you're lucky, you can find grocery store beans that are within two or three weeks of their roast date. Could be had for as low as $10/lb
Calculate the roast date from the best before date. Common timeframes are 12 months, 18 months, and 24 months. Lavazza for example, sets their best before date 24 months out from roast. You can look up the stats for other major roasters. If you can't find it online, you can try asking customer support directly.

Christmas is coming, I've been thinking about getting a coffee machine.
Should I get a simple nesspresso machine with capsule, or go full autismo and get a machine using whole beans?

I can't, honestly. I tried expensive tea with full leaves and cheap supermarket powder. I can only tell when I'm drinking my college's instant tea, which is bubblegum-ish tasting powder supposed to be mint.

Honestly I just want something tasting decent, simple to use and with the minimum maintenance.

Best money for quality & least work required is a delonghi superautomatic with a milk system, like a Magnifica Start with Milk.
As long as you have the space for one of them compared to what would be a smaller capsule machine.
They take a little bit of work to setup it up for the max temp but once you've got that done you push one button to get an espresso shot only, a shot + hot milk, or a shot + hot water. Obviously if you want an iced drink you add ice to a larger cup after doing the shot.
If you want to spend more for an improved user experience with more buttons and more drink options, get the Dinamica Plus.
