Yes. Most likely cotija. Kind of like mexican parmesan. It's a really good cheese, and when you make it yourself you can age it for like a whole year and it will get those crystals in it and be very strong tasting. Easy to make also.

I prefer queso fresco in sandwiches. Usually it is still kinda juicy with whey, soft and mild tasting so you can add really thick slices and it doesn't become too much.
