It's a really good cheese, and when you make it yourself you can age it for like a whole year and it will get those crystals in it and be very strong tasting. Easy to make also.I prefer queso fresco in sandwiches. Usually it is still kinda juicy with whey, soft and mild tasting so you can add really thick slices and it doesn't become too much.
