There was a guy that used to work with who always had them put mayo on his meatball/chicken/eggplant parms. They gave him a weird look at the counter but I tried it and it was legitimately awesome.

I used to get them from an old italian guy with a sandwich shop. he would make extra large meatballs and cut them in half, which makes them moister and not slip out of the bun. add pan fried peppers, onions and mushrooms. cheese is usually provolone. if you want spice, finely chopped green chili has the best complimentary flavor.

so with hoagies and hot sandwiches like this every ingredient plays a part

you want a nice thick roll (not too thin because the grease, sauce, and cheese will make it a soggy mess in your hands which is undesireable)

good meat blend (i personally prefer pork but a mix of beef+pork can be good, if you wanna be lazy find some sausages you like and slice the casing open to harvest the pre-seasoned pork within)

a good sauce (most sauces out of the jar are pretty bland so i'd recommend seasoning it to taste. i prefer sweet+spicy so i might take tomato paste, cut it with water and sugar, grind black pepper, add hot sauce, maybe a little bit of pickle juice or just a bit of yellow mustard to add some tang to it. or steak sauce, whatever works)

good cheese (im honestly not a big cheesehead but you want something that compliments the other flavor profiles well while also not muting them)

I grow my own peppers and make my own mash. I focus on flavor with a warming sensation. I would never put my hot sauce on an Italian dish. Now dried peppers is a different story, they would work well with Italian.
