korean here. to be fair you have to have a high taste bud IQ to appreciate korcow cuisine. first of all, its nice to have 5-10 different textures and flavors with all the side dishes instead of a giant slab of mashed potatoes and chicken. korean food is all about diversity (side dishes), communal eating (kbbq) and fried chicken (mogs american fried chicken btw).

many korean dishes are trash tho but the good ones are certified bangers

I think a lot of places don't have good Korean unfortunately. The most common dishes are pretty mediocre but the Korean style dishes are flavorful and unique
You have to pair things too, if you go into a restaurant and order only one thing you'll feel underwhelmed.
Sundubu jigsae with galbi or pork and 6 types of kimchi is amazing especially if you're drunk on 4 bottles of soju
The kimchi fried in pork fat after a hearty bbq
