Most people don’t realize that you can swap Polish/German/Slavic/etc sausages in for Italian sausages in Italian dishes, and they’re either as good or better.

I’m going to put some of this smoked kielbasa on a pizza. I will chop up more and mix it with rotini.

No, no you can't. Both the texture and flavor profile of those types of sausage are mikes and leagues away from each other. Italian sausage is coarse ground, and heavily fennel spiced. Polish sausages are emulsified, and mainly marjoram and garlic as the primary flavor components. They aren't a reasonable substitution. Just like you wouldn't serve Italian sauges with sauerkraut and apples, neither shouod you serve kielbasa ablnd peppers.

kielbasa is just the translation for the word "sausage"
but "Polish kielbasa" in the us is not all kinds of varieties of sausage. It's firm bouncy smoked, and typically a blend of pork and beef, or else made out of turkey. Its also a completely different flavor, not just texture, from italian sausage.

I make this kind of pizza ever so often using plain frozen pizza and extra low moisture mozzarella (gotta be grated fresh,otherwise celulose will fuck the cheese up)

I've never made an Italian recipe with Italian cheese or sausage. I may have used Italian canned tomatoes but they sucked so I don't use them anymore. I use local ones as they cost fraction of a price of original, Italian (imported) ones.
You see, it's perfectly fine to substitute ingredients or spices with ones you like. You will get a slightly different meal but it will be made to your local, regional taste.
Autists and crooks (which want to sell their exclusive, trademarked goods worldwide) insist that you must only use original ingredients in your kitchen. kek
Btw, the "original" Italian pasta (dough) recipes suck too. They haven't changed them in 500 years and it shows. This is NOT to say that their recipes are bad; on the contrary. Some tweaking here and there and they're fantastic.
