Lot of vegan should involve not just plant veggies, but also plant seeds, so like nuts, legumes, and small seeds. In general, all these parts will mean that a good vegan diet will have various good fibers. But the issue here is, if you don't already eat these on a regular basis, odds are your body won't be used to it. Same goes for milk or I think bread. You simply don't have the gut biome to handle these types of new foods, which means you need to introduce them gradually. I recall in college it only took me like a week to get used to eating pinto beans, it took me like two weeks to get used to the skin on chickpeas, and it took > a month to get used to spinach, but I'm sure for people it varies.

Don't just cut to vegan immediately, cause it's dumb to basically throw out all your previous knowledge. Instead, find a new ingredient to work with and make a recipe out of it, like lentils or chickpeas or black beans. Just add a new tool to your repertoire, then add another, then add another, and so on. Eventually you'll have many vegan/vegetarian ingredients to work with.

Tomatoes or coconut are good bases to make some curries/stews out of. You can start out with chicken stock, but eventually you can migrate to simple veggie stock with added msg or soy sauce or mushrooms (pretty good) or nutritional yeast if you want. Simple dal dishes are simple. Tofu is a great ingredient to play around with. Just do everything gradually, and don't overburden yourself with this extra "work"

lots of black beans. peanut butter toast and agave with banana. spinach or kale salads with avocado, tons of toppings like artichoke hearts and cherry tomatoes, with vegan dressing bretty good.

the stores back when I was vegan had tempeh lunch meat that I would fry and crisp up, then put in sandwiches with toppings and vegan cheese, then toast them in the oven. Crisping the vegan lunchmeat and toasting whole sandwich at the end is key. always make pasta with vegetable sauce, makes for reliable leftovers on hand. heated up pasta with Daiya white vegan cheese is good. white beans are a good side for pasta dishes for protein.

use a slow cooker or pressure cooker for big batches of beans you eat throughout the week from a big container in the fridge. that ends up being a reliable lunch for 4 days straight. black beans, or lentils, or white beans. lentils can be incredibly good, don't pass them up.

cook with lots of garlic. random occasions white rice with fried tofu, soy sauce, and baked eggplant. I used to get nearly-expired vegetables at the poorman's grocer, like spotty squash and bell peppers, and use those for anything. my big meal would be spicy soy sausages stir fried with mushrooms and bell pepper, then vegan cheddar cheese added at the end, over a big pile of boiled potatoes. spray it with ketchup. salty, oily and filling.

those are major issues in the study. i'm not saying collagen can never offer any benefits, but its benefits may be overstated as it's just a type of protein.

i can give you whey protein and you can tell me it made you build more muscle but it doesn't mean you wouldn't have gotten similar benefits from eating more eggs and that only whey protein will do this.

i actually have an issue with the collagen in my body and i looked into collagen supplements but nobody with similar issues seems to find any benefit from it.
