I love wasabi. I put wasabi mayo on my lunch sandwiches. It goes great with ham, turkey, roast beef, cheese, etc.

Wasabi loses its flavor in about half an hour after grating. It is not viable for sale as a product, just like concord grapes and mulberries aren't sold fresh because of their fragility.
