They are showing how they make an individual portion of curry sauce from this big pot of what I guess you would call curry concentrate. What I am curious about is what goes in to make the "curry concentrate"?

>>21698023They sell powdered "curry" mix in britian. It's the generic sauce they might offer at a chip chop for dipping your fries or chicken fingers. There are better concentrates sold in small concentrate jars w/thicker amounts of ginger, tamarind,lemongrass, etc. that are reconstituted with a can of coconut milk or canned tomatoes. That pictured slop has oil on top, and may be from scratch or simply warmed in oil before being thinned out.
