Not really. Diversification happens. It's well documented how it started out, but that was a long time ago. It's not the be all and end all for judging the quality of a restaurant. You may get a better meal at a non starred restaurant, conversely that restaurant may cost more, per head, than one without a star. What it does indicate is a certain standard. There's all the bullshit about restaurants buying stars. Even if that were true, it would still have to hit a certain standard for the star to be plausible. Arby's couldn't just buy a star, for instance.

and are quick to check out any new restaurant

Why is it odd? They sell tires - they WANT you to travel to wear them out. So providing you a reason to drive somewhere is essentially a synergistic form of advertising - you shill some good place to eat, more people come - restaurant wins, more tires worn out = more tire sales.
