there's this mexican place i like that always put these pickled carrots in w/ every order and i finally tried them instead of tossing them and damn, they were good. felt kind of dumb for having always thrown them out

Yeah the Portuguese do pickled carrots in a lot of their "couvert" and they're really good, especially with everything else. I think they must blanch them slightly to soften them just a little bit, some garlic and herbs in there.

I have a pretty varied palate, but stuff like this just has a really uncomfortable texture. It's very slimy and soft. I can take a few bites and enjoy it, but not too much long after, it's all just blubbery and kinda icky.
